- Dipping Sauce (optional): 2 tbsp vegan mayonnaise, 1 tbsp sriracha, 1 tsp lime juice

- Prepare oven:
- Preheat the oven to 210°C (425°F) and line a baking sheet with parchment paper
- Marinate tofu:
- In a bowl, whisk together soy sauce, maple syrup, olive oil, smoked paprika, and garlic powder. Add tofu cubes and gently toss to coat. Marinate for 10–15 minutes
- Set up breading stations:
- Prepare three shallow bowls: one with cornstarch, one with plant-based milk, and one with panko, sesame seeds, salt, and pepper mixed together
- Bread tofu:
- Working one piece at a time, dredge each tofu cube in cornstarch, dip into plant-based milk, then coat thoroughly with the panko-sesame mixture
- Arrange on baking sheet:
- Arrange coated tofu cubes on the prepared baking sheet. Lightly spray or brush with oil
- Bake:
- Bake for 20–25 minutes, turning halfway, until golden and crispy
- Make dipping sauce:
- For the dipping sauce, mix vegan mayonnaise, sriracha, and lime juice until smooth
- Serve:
- Serve tofu bites hot with dipping sauce on the side
