# Directions:
01 - In a large mixing bowl, combine the flour, sugar, baking powder, baking soda, salt, and spices using a whisk. In a separate bowl, whisk together buttermilk, pumpkin puree, egg, melted butter, and vanilla extract.
02 - Pour wet ingredients into the dry mixture and gently mix until just combined. Heat a nonstick skillet over medium heat and lightly grease. Drop tablespoon portions of batter to form small pancakes, approximately 2 inches wide. Cook each side for 1 to 2 minutes until golden brown. Transfer to a plate and allow to cool.
03 - Preheat oven to 350°F (175°C). Grease a mini muffin tin or add paper liners. In a bowl, combine flour, sugar, baking powder, baking soda, salt, and chai spices. In a separate bowl, whisk together milk, oil, egg, and vanilla extract.
04 - Gently fold the wet ingredients into the dry mixture until just combined. Divide the batter evenly among the mini muffin cups, filling each about two-thirds full. Bake for 10 to 12 minutes or until a toothpick inserted into the center comes out clean. Cool completely before removing from the tin.
05 - Heat a skillet over medium heat and melt butter. Add apple chunks, brown sugar, and cinnamon. Cook, stirring occasionally, until the apples are tender and caramelized, about 8 minutes. Allow apples to cool slightly before assembling.
06 - Thread one pancake bite, one muffin bite, and one caramelized apple chunk onto each skewer, repeating the sequence until each skewer holds two of each component.
07 - Arrange skewers on a platter. Just before serving, drizzle generously with caramel sauce.
